When you lift a glass of golden, glistening foam-coiffed beer to your lips and taste the liquid as it seeps down your throat, do you really have any idea what lies behind the magic that then fills your heart and head? This ancient work of art that has brought nourishment and cheer to humanity for thousands of years? Well, it’s just plain science: germinating barley, hydrolised cell walls, foam-stabilizing proteins and albumen-producing genes, for example.
